Abstract
This document is a summary of the different possibilities of flexible hygiene requirements laid down in the hygiene package. Includes flexibility in traditional methods, traditional products and geographical limitations, flexibility in the hygiene requirements for products of animal origin, flexibility in the application of the Regulation no. 2073/2005 relating to the microbiological criteria and flexibility in the implementation of HACCP.
