Abstract
The hygiene regulations establish the requirements that must be met during the preparation of food products. However, in order to protect the diversity of products in the European Union and to meet the needs of small food producers or those located in areas with special geographical limitations, these regulations include several measures of flexibility, depending on the nature of the establishment and the product made. The provisions on flexibility offer the possibility to grant exceptions and/or adaptations to certain requirements and to exclude some activities from their scope of application.
