dc.description.abstractThe CoP for Inspection of Children and Youth Accommodations was born in the 2017-2018 season with a very broad objective: the creation of a work tool that would facilitate the application of the integrated health control program in children and youth accommodations. The initial idea was the creation of documents that established unique criteria for all technicians in the inspection of these establishments and thus avoid differences between the latter through the unification and simplification of the requirement criteria. These documents had to group and simplify the different parts that make up the official control program: health conditions of the facilities, conditions of the water supply system for human consumption, prevention of legionellosis in sanitary water, supervision of water control plans. pests and food surveillance and control. In the 2022-2023 season, the CoP has worked to create the protocol and interpretation guide for the kitchen section of children's and youth accommodation. It has been its main objective. To prepare the work, the general and specific regulations that affect this type of establishments have been reviewed and evaluated from the point of view of food safety. The guides and protocols used until now in APSCAT for the inspection of children and youth accommodation have been examined. The result obtained from this period has been an inspection protocol and its corresponding interpretation guide for the kitchen infrastructure-equipment and process-product sections. The protocol has followed the same format as it was structured in the previous sections, in the form of a check list. The interpretation guide remains an accompanying document for the interpretation of the latter, which in turn acts as a support tool to implement the regulatory requirements.
