Abstract
Foods can contain biogenic amines, such as histamine, formed by the action of certain bacteria. Their presence depends on hygiene, the quality of the raw materials, and the conditions during processing or storage. Consuming high amounts of histamine, especially in fish, can cause food poisoning. In addition, some people have low DAO enzyme activity and may show symptoms even with small amounts of histamine. Other amines can enhance these effects.
